Emily and Michel Roux Create Pop-Up at Le Gavroche; Gaston Acurio's Manko Opens in France

Plus, Parabere Forum celebrates food entrepreneurs with impressive list of speakers

— Famed Peruvian chef, restaurateur, and cookbook author Gaston Acurio has opened the highly anticipated Manko in France — his first Peruvian restaurant in the country. The eatery — named after Manco Cápac, son of the Inca Sun God — is located on Avenue Montaigne in in Paris's Golden Triangle. The decor is inspired by modern Peru with gold accents, raw materials like leather and marble, and terracotta floor tiles. Family-style dishes of sustainably sourced fish, Peruvian vegetables, and charcoal-grilled beef are prepared in an open kitchen and served to diners on wide oak tables.

— Parabere Forum will be celebrating the work of food entrepreneurs who have elevated the norms of the gastronomic field. Held in March, the list of speakers is a who's who of the international culinary world. It includes Barbara Lynch, Teresa Corcao, Thais Compoint, Dr. Vandana Shiva, Massimo Bottura, Roberta Sudbrack, Dominique Crenn, Zahie Tellez, Gabrielle Hamilton, and many more. — After five years of working abroad at restaurants such as two-Michelin-starred Akrame, Emily Roux, daughter of Le Gavroche's Michel Roux Jr., has returned to London — but not to join her father at Le Gavroche. Although her path has been similar to her father's, who also left London to study before returning to rejoin his father in the kitchen, she has no plans of working at the London restaurant. Instead, Emily will be collaborating with her father on a menu that will appear in a pop-up called The Next Generation. Starting this month, Le Gavroche will close to the public on Mondays, not only to give its staff a much-needed break, but to host the series of pop-up dinners.
